Whats for Breakfast? "Blueberry Hot Cereal" -High Protein recipe

The beautiful Actress Alicia Silverstone follows a complete vegan lifestyle, which not only includes her diet, but also changes, which include her clothing and household items; that will in turn reduce her carbon footprint. You may not follow the vegan style as Silverstone does, but you can incorporate many delicious vegetarian foods into your diet, which will in turn improve your health.

I am not a big fan of meat and, I discovered soy foods to be very delicious and satiating, since they are high in protein and low in fat.
Soy gives you longer energy, compared to coconut, or almond milk, which is perfect for breakfast.

My favorite soy products for cooking are Mori-Nu® soft tofu and Trader Joe's plain unsweetened Omega rich soymilk. During this cold winter weather you are just craving a bowl of hot cereal for breakfast. But you need energy that will last you long until afternoon, like soy products can do. This is a recipe for a Breakfast Hot Cereal made of tofu. I served it to my boyfriend, he could not even tell I used soy products. This recipe serves two, perfect for a hot couple, like you two! Afterwards, you will have the energy to go on that hike.

Blueberry-tofu Hot Cereal

Ingredients:

  • 1 Cup Unsweetened soymilk, or half-half
  • 12 oz. Soft-tofu (measure on a food scale)
  • 1 Cup Frozen unsweetened Blueberries
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Stevia (for sweetness)




Cooking Equipment:

1) Cuisinart@ Smart Stick or any food processor 2) Small saucepan
3) heat-safe mixing spoon 4) medium sized mixing bowl

Instructions:
In a mixing bowl place soft-tofu, milk of your liking, and blueberries.
Blend with the Cusineart@ Smart Stick, until smooth.

Place the creamy mixture into a small saucepan and turn the stove top onto Medium heat. Add Stevia and Nutmeg stir until well blended. Turn heat down to Low heat and simmer for 10 minutes or until mixture has thickened to a cream of wheat consistency.

Remove from heat and pour into two small cereal bowls, Enjoy!
