Veg out with Leonardo DiCaprio
Leonardo DiCaprio was born the on November 11, he is a Scorpio, the seducer of the Zodiac. Water sign Scorpio's are said to be strong willed and magnetic. Leonardo DiCaprio definitely seems to fit such qualities. The gorgeous DiCaprio is not only a great actor, he is also a practicing environmentalist and humanitarian. DiCaprio flies commercial flights, uses solar power, and drives a hybrid too. DiCaprio also donates and volunteers for children's causes. All these qualities make me love Leonardo DiCaprio even more. Being that Leonardo is an environmentalist he usually eats environmentally friendly - healthy food. Quinoa burgers are all those things and vegetarian too. This is an easy healthy Quinoa Burger recipe to follow and serves a party of 4.
Ingredients:
• 1/2 Cup Quinoa, rinsed
• 1 carrot, diced
• 6 scallions, sliced thin
• 15 oz. can Northern beans, rinsed and drained
• 1/4 Cup breadcrumbs
• 1 Large egg, beaten
• 1 T cumin
• 1 t ground salt
1/4 t ground pepper
• 2 T olive oil
• 1/2 Cup Greek yogurt, plain
• 1 T Lemon juice
• 4 Pita breads
• English cucumber, sliced thin
Preparation:
Boil 3/4 cup of water in a saucepan, add quinoa cover and reduce heat and cook for 12 to 15 minutes until the water is absorbed, then set aside.
Pulse carrots until finely chopped in a food processor. Then add quinoa, half of the scallions, breadcrumbs, beans, egg, spices, pulse until all the ingredients are well combined, but still chunky.
Form quinoa mixture into 3/4 inch patties.
Cook burgers for 8 to 10 minutes until browned in a heated and oiled skillet,
Mix greek yogurt, lemon juice, and the rest of your scallions, a pinch of salt and pepper for the yogurt sauce.
Top quinoa burgers with yogurt sauce and sliced cucumbers, now enjoy!
